Any Home Bakers Here?

I have cauliflower but it is pickled and so are the beets.
oh yeah...:drool. Gosh I love all things pickled!
I have 2 jars of tiny pickled beets left. I want to open them, but for some crazy reason feel the need to hoard them:idunno..Guess I just don't want to have to wait till we finally get more planted & such..but just looking at them isn't getting me anywhere either:hmm..
My dad used to make a pickled veggie mix. Cauliflower, peppers, carrots, celery..I know there is more, but can't remember at the moment. It was so good. Found a recipe that looks like what he made, will have to give it go this season.

DH is still eating them..hahaha, they hold up so well. I treat them just like normal canned. Prep the jars & lids. I make the brine hot so it "seals" the jar. They have kept for 4-5 months so far:thumbsup

You did, but these were sweet pickles I had in the pantry.

I put carrots, jalapenos, garlic and a quarter of an onion in with the cauliflower.

I like to put hard boiled eggs in the pickled beets.
 
It never lasts long for me either, gets all 'whippy', limp before i get to using it all.
Have tried putting it in 2lb. tall container with a little water in the bottom, cut into sticks, lid on & kept in the fridge.
It stayed so-so, it was better left whole and used as needed.
Will have to try the "Alton Brown" way.:) Thanks for the info!
Celery stays crisp in the original bag in the vegger bin of my fridge. It takes weeks for it to go limp. I make a lot of soups and stews though.

Eggs in beets, yes..yes..yes!!
4 bean salad is awesome !! green & yellow beans, chick peas, kidney beans, red/yellow & or green peppers, onions...gosh my mouth is watering, hahaha:drool
Have to always have jars of that around too. One of our G-Daughters favorite eats.:D
Have you ever put up marinated peppers?
They are great on homemade pizzas, burgers, salads..pretty much anything if you like peppers.
I have to get my recipe book out & get some typed up here:caf...might happen sooner rather than later if I can't get to sleep soon.:hmm
