DH is still eating them..hahaha, they hold up so well. I treat them just like normal canned. Prep the jars & lids. I make the brine hot so it "seals" the jar. They have kept for 4-5 months so far![]()

I put carrots, jalapenos, garlic and a quarter of an onion in with the cauliflower.oh yeah.... Gosh I love all things pickled!

My dad used to make a pickled veggie mix. Cauliflower, peppers, carrots, celery..I know there is more, but can't remember at the moment. It was so good. Found a recipe that looks like what he made, will have to give it go this season.
Celery stays crisp in the original bag in the vegger bin of my fridge. It takes weeks for it to go limp. I make a lot of soups and stews though.It never lasts long for me either, gets all 'whippy', limp before i get to using it all.
Have tried putting it in 2lb. tall container with a little water in the bottom, cut into sticks, lid on & kept in the fridge.
It stayed so-so, it was better left whole and used as needed.
Will have to try the "Alton Brown" way.Thanks for the info!
