Any Home Bakers Here?

I’ve made corndogs with Jiffy corn muffin mix, and making corn muffin mix from scratch. You need a sweet cornbread/muffin recipe.
Pour into a tall glass to dip the hotdog. My husband and I thought they tasted like fair dogs.

The recipe I made was a sweet-ish tasting cornbread but I'll try the Jiffy mix and see if we like that better.

we found cornbread but few extra tablespoons of flour and less
milk but used my half and half doing the same to make onion rings tonight
I have frozen my onion seems to help
Onion Ring Batter
Ingredients

2 large onions, cut into rings
1 cup all-purpose flour
1 cup Cornbread flour
2 tablespoons all-purpose flour
1 cup milk
1 egg
2 tablespoons vegetable oil

1 teaspoon salt

vegetable oil for frying

Directions

1. Soak onion rings in a bowl of ice water for 1 hour; drain and pat dry with paper towels.
2. Whisk 1 cup plus 2 tablespoons flour, milk, egg, 2 tablespoons vegetable oil, and salt together in a bowl until smooth.
3. Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
4. Dip onion rings in the batter, working in batches, until evenly coated and arrange in 1 layer on a plate.
  1. Fry the battered onion rings, working in batches, until browned, about 5 minutes. Transfer fried onion rings to a paper towel-lined plate using a slotted spoon.
