I had a friend tell me the same thing about canning with milk, but I just don't feel comfortable canning a cream soup. I had a bad experience once and just can't make myself risk it again.

@BullChick The turmeric in that recipe - does it make the soup look slightly orange'ish or off-color at all? DH won't eat anything that looks different than what he expects it to look like. Potato soup is supposed to look slightly off-white only :old. Yes, I got the lecture about trying to jazz up a good thing...
 
I didn’t see a color difference with the small amount. However, you can skip whatever. Sometimes I make it just with potato flakes and milk. It makes it easier to get Duckling to eat it if I need a fast side dish. Let’s face it, potato soup is just thin mashed potatoes.

That's gross BC. It is NOT thin mashed potatoes.
 
Lol, i don't really like coconut milk either but it's pretty awesome in this. There's just a vague hint of it when it's done but I'm sure it'll work great with any potato soup recipe! I'm in central PA and we have about the same weather right now but it takes high 90s and up for me to be too hot. I'm that weirdo here that's always cold though lol



It freezes pretty well too :) I plan to make a bunch this fall to pull out throughout the winter. I could eat soup all year long though lol. I'm also the kind of person who would eat spaghetti for breakfast!

Very good to know that it freezes, I like to do the same with things we like.

I ate half a turkey, ham and cheese sandwich with spicy pickles for breakfast, and I've had spaghetti myself for breakfast lol
 
Cupcakes for work tomorrow for us adults. I can’t give to the kids as it’s not prepared on sight. A teacher is leaving(the daycare I work part time at)to go back to regular school. I’m making cut out cookies at the daycare tomorrow and the kids get to decorate them.
