I have made ginger fairy bread, and many versions of ginger thins trying to copy the pepparkakor in Iceland but to no avail. Seriously, until I can make the scandinavian ginger very thin cookies, I will buy them at Trader Joe's or Ikea.

Yes I’ll make them again! Next time I’ll add more cayenne. They’re harder than the hubs of hell so they would mail well!
