I do make sure that the bread is completely cool before putting them into the bag. That helps with condensation
 
I got my sourdough starter out of the fridge and fed it. I guess it was just napping because it grew 3X in 2 hours out on the mantel behind the woodstove. I looked at the Rustic Sourdough bread recipe (KA) and figured I was all set .... until I got to the part about the bread cloche or dutch oven. I do not have such a thing, does it HAVE to be baked in a "vessel"?

Sometimes I don't want to dirty up the dutch oven so I put a piece of parchment paper on a baking sheet and sprinkle it with a bit of cornmeal to keep the bread dough from sticking. The clean up is super easy.
