Banana Walnut Muffins
6 large or 12 small
Muffin:
1 1/2 Cups AP flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon nutmeg
3/4 teaspoon cinnamon
1/2 teaspoon salt
2 large or 3 medium bananas, mashed
1/2 Cup white sugar
1/4 Cup packed brown sugar
1 egg, slightly beaten
1/3 Cup melted butter
1 teaspoon vanilla extract
1 Cup roughly chopped walnuts, toasted
Topping:
1/3 Cup packed brown sugar
2 Tablespoons AP flour
1/4 teaspoon cinnamon
1 Tablespoon butter, softened
1. Preheat oven to 375*. Lightly grease (or spray with no-stick) muffin cups.
2. In a large bowl, mix together flour, baking soda, baking powder, salt and spices.
3. In another bowl, beat together bananas, both sugars, egg, vanilla extract and melted butter.
4. Stir banana mixture into flour mixture just until moistened. Spoon into muffin cups.
5. Mix topping ingredients in small bowl until mixture resembles coarse cornmeal. Sprinkle over the muffins.
6. Bake in pre-heated oven about 18-20 minutes for small muffins and about 20-22 minutes for large muffins. Bake until a toothpick inserted into the center comes out clean.
Cool on a wire rack about 10 minutes then remove from muffin tin.
