Any Home Bakers Here?

I'm taking a shot at this one, it is half white, half wheat flour which is what we do when we make pizza dough. I hope AP flour will be OK since I didn't notice it said bread flour. Going to do it just on a baking sheet since @wyoDreamer and @N F C said I could do it without a baking "vessel":

no knead bread develops gluten as it proofs for hours. If you are making pizza dough and baking quickly, it should be kneaded.

You will have very tasty pizza crust!
 
Yeah I have to knead the pizza dough. My hands don't like the kneading process much. I watched the video for the bread I'm making where the guy is "folding" it. That is pretty much how I knead but I do it longer and on a marble "board".

Has anyone made gluten free bread? DD1 is intolerant (also of nightshades so no potato flour or starch). She'll be here from school for a couple of weeks at the end of April. She does make one kind of GF bread but it would be nice if I could come up with something else as well.

I use the dough hook on my kitchen aid mixer. It is great for those with arthritis.
