I will have to look at the 2000 pennies. Most of my extra pennies are 1957 and back.
There is an 18th century cooking channel on youtube I watch and he did a show on "bacteria bread" which was a very rudimentary sourdough. They didn't keep a starter, they would mix everything and leave it for somewhere around 36 hours in a wooden bowl to pull yeast out of the air. They never washed the bowl and left crusty dough bits stuck to it which would help the next one rise better and faster. A less wasteful version of sourdough.There was an article about the current sourdough craze in the US. Some think sourdough is waste full, likely because you sometimes toss a cup. People are weird!
I don't know why anyone would keep a starter and not use it. In a pinch toss some but you can use the discard for a lot of things. The crumpets I made took literally 10 minutes including cook time and they can be kept a few days if you don't eat them right away.There was an article about the current sourdough craze in the US. I was just looking at the KA site for something to bake with my grandsons and saw a recipe there for crackers. They want to make the pretzels though so we're going to try that first.
