My little project for the day, to have something with our cup of coffee in the evening.
It’s called modified Amish banana bread.
ingredients:
4 bananas
4 eggs
200g oat flour
1teaspoon salt
1.5teaspoon bakingsoda
50g butter
1-3tablespoon buttermilk
first you mix the banana and eggs with the blender until you have a smooth substance.
next you add all other ingredients except for the buttermilk until your dough is smooth.
after you add 1 tbsp buttermilk if your dough is already quite runny or up to 3 for dryer dough.
baking: 65 minutes @160 degrees Celsius (320F?)
This allows you to make banana bread without added sugar (i know, banana contain sugar too!)
you can add pumpkin spice powder or crushed walnuts to make a variation.
If you like your banana bread sweeter, put butter and honey on it before consuming
