‘if you don’t like to or can’t use buttermilk, make sure you use another acid for instance citric acid. Never tried it but that’s the suggestion :)

The acid is needed for baking soda to raise the cake. If you do not use an acid, like lemon juice, yogurt, buttermilk, vinegar and etc. Use a teaspoon of baking powder for the half teaspoon of baking soda. It will have a different texture but will be tasty regardless!
 
Maybe you can get a scale as a present!

Mine was not expensive though. It is mostly plastic. I have my eye on one that is better but is is a bit pricey.

My old one was clunky but I could tare the tray or any vessel first before before adding the item into the vessel.

I think they meant for the buttermilk trade out.
Like when you don't have buttermilk but can add some lemon juice or vinegar to regular milk to "make" buttermilk.

I know in GF cooking some recipes call for an addition of powdered citric acid or vinegar as stand alone ingredients however they don't have baking soda even in them.
 
I use my kitchen scale all the time. DH's favorite summer meal is hamburgers, so I buy Ground Sirloin when it is on sale and freeze 5 oz. burger patties for use whenever he feels the need to grill, lol.
I also use it when I freeze ground beef in 1 lb & 1.5 lb packages. Or repackage any meat that I buy bulk when it is on sale.
I use it to evenly divide dough for buns and rolls. Or my pizza dough recipe into 3rd's.
I use it when I make meatballs, I like them to all be 1 oz. (A little OCD there, lol.)
I use it to make a 2 layer cake with equal layers.
Now that I am on Weight Watchers, I should be measuring most of what I eat, so it will be placed front and center on the counter top.

I actually wrote the weight of my stainless steel mixing bowls on a sheet of paper hanging on the inside of my cupboard so it is easier to know the weight of the contents when I forget to tare the weight of the bowl.

I love my kitchen scale! Use it a lot for equally dividing things like dough for rolls, pizza doughs, etc.

It has the ability to measure things by ounces, grams or pounds...very handy!

Kitchen Scales always out in my kitchen next to my Hoosier. But I do
not have a gram scale. I Google the grams and they give me the answers.
