I will go back and work on the instructions!OK, about this Champlain bread (which is in the oven on the first 20 minutes as I type).
Really sticky this time. I don't know if one is supposed to put the "loaf" in the dutch oven while still on the parchment paper but that is what I did this time because there is no way it would be anything but stuck to my hands if I tried to pick it up.
Also, in the instructions, I looked at this part again:
"Premix all ingredients at 9pm the night before baking bread. Cover bowl with plastic wrap. Replenish the starter and leave out over night."
and decided that last sentence means "leave the mixture out overnight" and "replenish the starter". I was trying to figure out why I would be instructed to leave the starter out overnight as part of the recipe.
Love bear meat...I've never had bear before. Blooie used to talk about how good it was.

they're little chocolate cakes that I baked in a silicone hemisphere mold. The topping is melted chocolate beaten with some cream and stick margarine. they were very good, but also rich. I'll see if I can find the recipe again.

YES, you do use the parchment to help place the loaf in the Dutch Oven. I am sure Ron will have MORE answers for you. I found the dough "should be just right" NOT too Wet....NOT to Dry. You should beI will go back and work on the instructions!

able to handle ANY Dough. After you Bake Breads you get to know the
"Wetness or Dryness" of the Correct Dough. At the Final Shape...the dough should NOT stick to your hands. If too wet...It WILL NOT HOLD

My Mom said add flour until the dough feels right. Not to helpful but true!I am not sure about the Champlain bread you all are making, but for a regular bread dough, ff the Dough is that wet and sticky, you need to add more flour. Just dust the top with some flour and start kneading it. Add just a little at a time until it feels slightly sticky and soft - the dough will just barely stick to your hands as you knead it and shape it is how I do it.
