Any Home Bakers Here?

Google Chrome is my Browser. I have a 2018 Computer. And I had
a problem with Google Chrome a few days ago with my U Tube. I disliked this one "foreign speaking guy" that never gave recipes. And I
Right clicked and a square came up with Block and I clicked on it...MISTAKE. LOST my U tube. I was able to download Microsoft Edge
and now I get just get my U tube on Microsoft Edge. I do not like it as well.
The Google was faster, did not have ads. The Microsoft Edge is slower
and has Ads. EEK. I tried to call Google Support....no live people, because of the Virus. Will be trying Google Support Team and try to have them
help me get my Google U Tube Back. Wish I knew more about this stuff.....like Bob. I know he knows a lot about Computers. Aria

I use Staples when I have problems on my computer. They have a plan where you pay so much and they work on your computer anytime.

Thanks! I can’t say I’ve not been succeeding, the bread has been delicious! But the loft of the loaves have not increased in proportion to the increase in my girth!
 
Today I decided to experiment a little. I found a recipe called Coolrise Whole Wheat Bread. I have made the coolrise recipes in the past and they’re easy enough. I really enjoy the crumb of the sourdough sandwich loaves but want to reduce the white flour consumption.

I mixed the whole wheat flour with 1 cup of starter and most of the water in the recipe. Let that sit on the counter for an hour or two then threw it in the KA and added the rest of the ingredients, kneaded for 10 minutes then let it rest for 10 minutes. I tried the windowpane test and it did pretty well! Dough was moist and supple. A pleasure to shape! It’s in the fridge now and I’ll let you know how it bakes up!
 
I'm sure the spelt won't make a difference in the stickiness but it sure would be nice to try the recipe with it. OK, adding 64g AP flour the next time. Now I have to remember!
Just add half a cup more flour. You will need to play around with it to see how things go with the conditions at your place. When you get the loaf you like, try for that feel to the dough to know then it is "right" like my Mom says :gig
