It should be very good!Today I decided to experiment a little. I found a recipe called Coolrise Whole Wheat Bread. I have made the coolrise recipes in the past and they’re easy enough. I really enjoy the crumb of the sourdough sandwich loaves but want to reduce the white flour consumption.
I mixed the whole wheat flour with 1 cup of starter and most of the water in the recipe. Let that sit on the counter for an hour or two then threw it in the KA and added the rest of the ingredients, kneaded for 10 minutes then let it rest for 10 minutes. I tried the windowpane test and it did pretty well! Dough was moist and supple. A pleasure to shape! It’s in the fridge now and I’ll let you know how it bakes up!
