Ok odd question i dont think its possible but my dad has the beganing of being diabetic and he loves pecan pie any way to make that for him that wont make him sick?

This is my pecan pie recipe that i used last year that he loved (before he started having problems) 3large eggs whites only, one yolk, 1 cup of light syrup, 1/2 cup of sugar, 1/3cup dark brown sugar, 1tsp vanilla extract, 1/8 tsp salt and 1 cup pecans. Now i know i can sub the sugar for something else but what about the syrup. I found a recipe but it still calls for the syrup which i can only imagine would hurt my dad. (Something make him sick other dont yet). I just havent firgured out what and he cant know otherwise he wont try it.

Could you use something like corn starch to thicken? I know you would have to switch to a non sugar, those are super sweet so a little would go along way, then maybe a bit of molasses for flavor? I am just guessing.

I don't think if he's just beginning to be a diabetic pecan pie will make him sick.
They started to refer to me as diabetic after my A1C went over 7. With out changing anything and just eating less my,A1C dropped to 6.5....
Now if you sat there and force fed him pecan pie ever day ...that's another story. But if he's not shooting insulin I'm sure he would be fine...best thing to do is ask him....

He cant eat regular bread or torillas with out getting sick same with ice cream. His dr wants him to go ahead and eat like a diabetic. It could just be him not sure thats why i want to try to make it diabetic friendly. I am just being over causious probably but after seeing him start shaking and sweating i want to avoid that again.

You can give it a try, but he might just prefer the pecans roasted with salt.
Food is more about not being left out, it is a reason for gathering and being together. If he doesn't have to sit there and watch other people eat, I bet he'd be good.

Well him and my mom and brother are the only three that like pecan pie thats why i want to make sure he can eat it. When if comes to the rest of the meal he will only eat the potatoes and meat thats just how he is. But my daughter and i both have low blood sugar so most things i make already are in tune with that. As i dont like pecan pie way to sweet for me i try to make things better incase my daughter wants some as well. And i might have my diabetic grandfather come up as well. So its best to make everything diabetic friendly.
