Any Home Bakers Here?

Good afternoon all. Maybe it’s evening since it’s after 1800. I am making sourdough starter again, my guys got pushed to the back of the fridge and then looked pretty gross so I dumped them this summer. Temps should cool off a bit by next week though so maybe I can start baking by the weekend after.
Unless the starter turns pink, you can get it going again.

Even if it turns pink it will likely start up too.

Put a cup in a freezer safe container and freeze it when you get it going again.

They were grey and pretty gross looking. I wasn’t sure so figured better safe than sorry. I have dehydrated starter that I kept for just in case.
 
I hadn't done any baking or even cooking for a while due to severe shoulder pain, but have been in PT for a while now and feeling better. So yesterday I decided to learn how to make a beschamel (white) sauce, rich, with egg yolks. Delish! So what to do with it? Made a beefy mac n cheese dish with spaghetti sauce, Parmesan and mozzarella cheeses, a little sour cream and onions, and topped that with some teriyaki and butter sauteed sliced button mushrooms. Then poured the beschamel sauce over all and baked till bubbly. Mwuah! SO good! Served with a spinach, cuke and tomato salad with a vinagraitte dressing and a side of fresh strawberries.

Grey is fine and will restart quickly.

It is good to keep a backup like you did!

Bechamel sauce is good as a substitute for ricotta cheese in lasagna. Add some basil and oregano to the sauce and it is so good!
