1 cup sifted cake flour

Sooooo... what would happen if I used a gluten free flour? Or even almond flour? I'm sure it wouldn't be a light, fluffy cake, but I wonder if it would be edible. Might just have to try it. If I do, I'll report back.

It isn't a light fluffy cake. I don't worry about gluten because my body craves gluten.

1 cup sifted cake flour
1 1/2 tsp baking powder
1/4 tsp salt
6 tbsp sugar
2 tbsp shortening
2 egg yolks
1/2 cup milk
6 cups pared and thinly sliced apples
1/2 tsp cinnamon
butter

Preheat oven to 400°F.

Sift flour, baking powder, salt and 2 tbsp sugar together.

Cut in shortening and mix well.

Beat egg yolks, combine with milk, and stir into first mixture.

Beat well.

Pour into greased 9" layer pan and cover with apple slices.

Sprinkle with remaining sugar and cinnamon.

Dot with butter.

Bake in hot oven (400°F) about 35 minutes.

I meant to say, once established, sourdough doesn’t die. Feed it once, and it comes back. Freeze it, and it still lives.
I didn't know you could freeze it. I was trying to figure out how it was dried, that surprised me as well. But I should of guessed about the drying because Ron shared an interesting story on how archeologist found preserved wheat.

Still learning here :)
