Good morning Marie :frow Hope life is treating you well 😊. My issues are still bothering me and now I have a new problem. On Monday I was collecting eggs and on my way back and started up the steps when my right knee gave out. I fell backwards and landed on the ground, catching myself with my left hand. I broke my hand in two places. I had surgery on Friday, they put a metal plate and pins in my wrist. Needless to say, it hurts a lo, but I'll get through it like I get through everything else. Thank you for asking about me.

Sorry to hear about your accident. Maybe you need to start using a cane. I have one cane for use while tending the chickens and another in my truck. Please make sure you use your whole arm on the left side. Get well!

I agree! I bought a cane when I impaled myself on a garden rake (it was nasty). Doing animal chores alone means no crutches, and I do keep injuring myself. Hugo has feet to stay in place even in the bedding of the coop, and I used another in the house.

Tried something new today...I took 2 different breakfast cookie recipes and combined parts of both to make my own version. They turned out well and will be fun to play around making with different ingredients.

Breakfast Cookies
(makes 12)

2 to 2 1/2 Cups oats
2 ripe, mashed bananas
1 Cup peanut butter
1/4 teaspoon salt
1/4 Cup honey or real maple syrup
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 1/2 Cup mix ins (dried fruit, nuts, seeds, coconut, chocolate chips, etc.)

* Heat oven to 325*
* Combine all ingredients in a large bowl, mix well
* Using a 1/4 Cup measuring cup, scoop dough onto lined baking sheet (about 6 per sheet). Gently press dough down as these cookies do not spread.
* Bake 17-20 minutes (until edges are lightly browned)
* Cook on baking sheet 5 minutes then transfer to cooling rack
* Store at room temp up to 5 days or in fridge up to 10 days

The ones I made today had dried cherries, coconut and pepitas in them...yum!

The variance in the oat measure is due to what you put into the mix. If you substitute something like pumpkin puree for the banana, you might want to add the additional oats for the thicker batter. You can also substitute apple butter or maybe applesauce for the honey.
Well, shoot. Now I gotta go to the store tomorrow and get some stuff- these sound like a must make.

Oh Grammy60, prayers for a speedy healing. Work that hand, shoulder and elbow. When you get up in age, joints want to freeze on ya - ask me how i know. I will give you the advise my MD gave me- slow down, watch where you put your feet and stay off ladders. i would add- use a cane.

1 cup sifted cake flour
1 1/2 tsp baking powder
1/4 tsp salt
6 tbsp sugar
2 tbsp shortening
2 egg yolks
1/2 cup milk
6 cups pared and thinly sliced apples
1/2 tsp cinnamon
butter

Preheat oven to 400°F.

Sift flour, baking powder, salt and 2 tbsp sugar together.

Cut in shortening and mix well.

Beat egg yolks, combine with milk, and stir into first mixture.

Beat well.

Pour into greased 9" layer pan and cover with apple slices.

Sprinkle with remaining sugar and cinnamon.

Dot with butter.

Bake in hot oven (400°F) about 35 minutes.
