Any Home Bakers Here?

We definitely do the feast to famine around here.
I would like to know how to do that too.

I do not worry. But that does not mean others wont. I am sure the FDA would not approve but you can dehydrate at higher temps if you like.

The army has egg powder and I am sure ppl were weird about dehydrating meats too.
 
I crack the eggs into my standing mixer and whip them till they are fluffy.


I line the dehydrator trays with press and seal cling wrap
I put the fluffy egg onto the trays and dehydrate them until they are crumbly looking some of the egg is not fluffy and dries solid I keep them in the dehydrator until they egg is completely dry


then I add all the trays to the blender and crumble to a powder.
I store it in a zip lock bag but would use a food sealer if I had one.

To Re Hydrate
1Tbsp of Egg powder
2Tbsp water
quick stir and let sit about 5 min then use as any egg.
Perfect!

My dehydrator has an insert for liquid--I use it to make fruit leathers. It would work great for dehydrated eggs!

Another reason for me to get a dehydrator!!! I also need canning equipment lol, i have a food saver (vacuum sealer) which works great but i run out of room. My husband bought that for me and year before last he bought me a deep freezer for my birthday best present ever (beside our kids).
 
I still have a bit from last year that I am still using I like the fresh eggs because I like over easy and DH likes sunny side up those I have not tried to dehydrate. so I stop using when eggs pick up again.

I dont have a time line because I am not sciencey. I dehydrate the garden and we usually dont have much left over of anything to say it gets old or gross after so long.

Now I just have to get a dehydrator, well and some eggs.
