Any Home Bakers Here?

We are going to have to buy eggs. The girls are on strike. Happens every Christmas...

Just a thought,
I dehydrate many of the extra eggs I have from the summer so I dont have to do the store bought thingie. So Christmas goodies are usually made from rehydrated egg powder.
I was very surprised at the quality of even the scrambled eggs when I first started doing this.

Got my gingerbread cookies done this morning. How does stuff get lost one holiday to another? Last year I couldn't find my old cookie cutters so I bought a couple of gingerbread people cutters. This year I couldn't find them but found my old cutters. I expect the gingerbread people to show up next year.

I always pack the cookie cutters in the holiday boxes.
That way when I unpack Christmas or Easter I have the right cutters and dont have to store them in my kitchen.

I am looking for a yummie cookie cutter recipe. I want a recipe that can stand alone or be frosted . Something flaky but not rock hard.
I just cant seem to get the cookie just right.
Anyone have a great one.

I am still getting eggs--mostly because of the trader Joes fertile eggs I hatched last year--They are amazing!

I have been able to get eggs out to some customers--one of them asked me if my hens were doing ok--She was worried because they were not laying as many eggs as usual.

It was a teachable moment for sure!
 
Mine are a 10 months-8months old so they are still laying, i have a friend who have some and here they lay all year round thanks to our mild weather. Its been like spring the last few days we had highs in the 70 and one day in the 80s so yeah got to love texas she can never make up her mind what weather we gonna have.
 
Are Ancona duck still lays almost every day, the runner duck has pretty much stopped. It's sad when you have to break down and buy eggs at the store

My Trader Joes chicks are almost a year old.

It is the light level, age and the breed that will keep them laying in the winter. Temperature has something to do with it but not much.

Texas has a lot more hours of daylight then further North and if you have a breed like Black Austarlorps or Rocks then they will keep laying eggs.

. So I needed to figure out how to have eggs all winter especially since I was sending home eggs with our grown children all summer. thinking and thinking I tried dehydrating. It works well.

My layers are molting and I do not give extra light in the winter since I have pet chickens I want them to get the calcium in winter for their own growth and bone health.

The bantams and silkies are layin right now and it is funny to say I had a 6 egg omelet for breakfast. LOl

So how do you dehydrate your eggs? Then how do they need to be stored?
 
I crack the eggs into my standing mixer and whip them till they are fluffy.


I line the dehydrator trays with press and seal cling wrap
I put the fluffy egg onto the trays and dehydrate them until they are crumbly looking some of the egg is not fluffy and dries solid I keep them in the dehydrator until they egg is completely dry


then I add all the trays to the blender and crumble to a powder.
I store it in a zip lock bag but would use a food sealer if I had one.

To Re Hydrate
1Tbsp of Egg powder
2Tbsp water
quick stir and let sit about 5 min then use as any egg.
