Making hubby a loaf of bread in the machine. The recipe is from a neighbor named Betsy, so we call it Betsy bread.
I've taken some of the ideas from this to use in my GF machine bread, and it improved the recipe quite a bit.
Add 2 Tablespoons of instant mashed potatoes
Add 1/2 cup of old fashioned rolled oats.
The GF bread has a better texture. Still dense, but not as gluey. And if I can hold off and let it totally cool in the pan, the top doesn't sink. Well, a little, but not like it got stepped on. But it's hard to resist... The very best part of homemade bread is to saw off a heel, slather on butter, and eat it while it's warm.
