Now all this bread/roll discussion makes me want to bake - but I don't have any Bread Flour and no Wheat Gluten - wonder if I could sub AP unbleached flour for Bread flour?

@sumi has been working on breaking up the index into categories. It's not completely done yet so wasn't really announced (not that it was a secret). I'm ok with a Tips & Substitutions. We'll see if she knows we're talking about her here and responds. @sumi paging sumi! come in please!
