This was really helpful for me when I was first making broth.

I save the trim ends of onions and garlic and any other veggie scraps I have in a ziploc bag in the freezer.

I got 5 pint-and-a-half jars out of my "scraps." Turkey carcass, veggie scraps: free, as otherwise they'd be tossed into the compost, or given to the chickens. Add in peppercorns, 2 bay leaves, a splash of vinegar, and the electricity to run the Instant Pot. Compare that to store bought prices any day of the week!
No kidding! A little 8 oz carton of bone broth at the store was almost $10!

Marie I have to agree with you. My new microwave came with an airfry basket and has settings for airfrying. With all the fussing around stirring, I could have finished the rest of the meal peacefully while my chicken wings baked quietly on a rack in the regular oven. Maybe I need to play with it more, but if I'm honest I'd rather have genuine fried wings! Next best oven baked. Oh then there is the basket and tray to clean, as well as the inside of the microwave. My regular oven has the decency to clean itself! :gig

Good for you! This stuff just came with the microwave. I'm really glad I didn't pay extra for it! Plus fishing things in and out of a hot microwave to a basket on a rack that's in the very top of the oven space was ridiculously clumsy and it's only a matter of time till I burned the back of my hand.
 
It’s killing me to wait until this loaf cools before I cut into it. But that’s new to me, too.

I'm pretty sure most of us consider waiting 5 minutes or more as "cooled" (aka we are all impatient and love a fresh warm/hot slice of bread)!
I've not heard of levein before. So I looked this up . I'm still getting my heard around it.
I kind of think of it as "activating the yeast" (but with sourdough, not instant dry yeast).

I made sourdough bread dough for the first time in months yesterday, and forgot to do the fold and turns during the bulk rise. It tried to escape the bowl.

Speaking of, my new sourdough starter is officially grown and moved into the fridge. Also, I need to get potholders that are ok with 500° pans....

Happily, I planned on using this pan for my lid, so I didn't have to transfer the loaf from this tall sided one to the shallow pan.

The one on the right was in the shallow pan with a tinfoil cover. I think the tinfoil squashed it a bit, but what else could I do?
