Any Home Bakers Here?

My loaf of (bread machine) bread) was still lopsided when it went into the last rise. I smoothed it out so that it would fill the pan, but at a cost of some rise; it's shorter than usual.

I did open a new bag of flour, and it is different. Now I need to tweak the recipe to make the loaf a bit bigger, I guess.
 
:hit I sooo want to bake! But I have 3 loaves of bread in the freezer right now that have GOT to get eaten before I bake any more! And a fridge full of leftovers before I can make even another pizza.... and I am cookied out. I'll just drool over all you guys' baking for a while, but it's killin' me!
 
My Poppy-seed Cake ... a SUCCESS:frow
Here is the recipe, I kept track of the amounts.

Poppy seed cake.
Ingredients for dough bottom.
2 sticks of butter
2 whole eggs plus 2 egg yolks, ( save egg-whites)
! cup sugar
1 TBsp Baking powder
2 ½ cups All-purpose flour

Ingredients for topping
1 can Solo Poppy Seed cake and pastry filling
2 egg-whites from above saved
1 Tsp Baking powder
½ cup flour

Procedure.
Melt butter, and let cool to about 90°F, Don't want butter if hotter
to start cooking eggs when added.
Place eggs into stand mixer, add sugar, and mix well
Add butter, and Baking powder, and mix.
Add 2 cups of flour, and mix with dough hook until smooth.
Remaining ½ cup of flour, add spoon at a time until desired consistency
reached. May not be needed if the eggs were smaller than usual.
Pan (parchment lined) spray with Spray Butter, and spread dough on bottom

Make topping ; first beat the egg-whites. Add contents of poppy seed can.
Add 1 Tsp baking powder, and mix well. mixture will be somewhat loose,
so add ½ cup of flour, and mix well. Topping will not be as stiff as bottom dough layer.
Spread on top of dough,, Preheat oven to 350°F.... Bake 45 minutes

Check with toothpick inserted in middle. If comes out dry, cake is baked.
Let cool in pan for about 15 minutes, so when taking out, it will not fracture.
On a flat cutting board, slice, and consume warm, or wait if you can and consume cold.
Notes:
Pan used,, 9 inch by 12 inch 2 inch deep
Butter can be replaced with margarine
Cake will be somewhat firm rather than moist. Texture similar to Pound Cake.
Can reduce flour amount in dough to get less firm, and more moist texture.
Spray Butter can be omitted with greased pan with regular butter.

Invite a family with hearty eaters over for a French toast feast.

There is a solution to leftovers.:drool:drool:drool Just need to get creative. Consider what we had for lunch today. Done in very short time. This is technically baking..

These are mini pizzas. :drool:drool:drool There is no recipe needed,,
Start out with Flour Tortillas. (@Sally PB , Corn tortillas also good)
Purchased from store;
These were 7 inch diameter. Caseras. For larger pizzas, get the Burrito tortilla wraps. They are the largest. Corn Tortillas are generally taco size, and smaller. Just make smaller pizzas, and more of them:idunno
Spaghetti sauce, or Marinara on base. Top with whatever goodies you have leftover. Dust with dry seasonings. (I used Italian Seasoning) Sprinkle with Mozzarella cheese,, or whatever other you have shredded. Place on cookie sheet. Into oven @350°F until cheese is melted. and slightly tanned :old All your ingredients are already pre-cooked to start out.
My ingredients today: Mushrooms, chopped Pepperoni, Olives, Diced potatoes,(leftover cooked) Diced onion, Leftover chili (thick, not soupy) Mozzarella cheese. Seasonings.

Makes a different kind of food every-time there are different ingredients :thumbsup

I INVENTED a recipe based off of a song I heard in a video game.

“Walnuts, peanuts, pineapple smells,
grapes, melons, oranges, and coconut shells!”

As you can see, I stuffed a Jell-O/pudding/Whipped cream mixture with the above ingredients into a coconut shell! It actually turned out quite delicious!

If you want more details, I’ll post the full recipe later.
