Any Home Bakers Here?

Speaking of pancakes...
Does anyone here have to bake with plant based milks?

We do as kiddo is allergic to anything animal milk, but I was wondering if anyone has used oat or pea milks.

We did the soys and rice milks (bleh) then when almond milk came out switched to that. It works and I know how to use it, but was wondering about people's experiences with oat or pea milk. I've experimented some with neutral flavored coconut milks and they are ok.

I tried oat milk and mine was okay. :)
 
It's not baking, but I did make Greek style yogurt today. I ended up with half a gallon of whey, so I'll be using that to cook rice, make bread, and mix into the chickens' mash. I'm pretty sure I can't make ricotta out of it; I tried and got nothing.

@jnicholes, Jared, is that correct? Will whey from yogurt make ricotta?

You know what? I don’t know! Let me take a look into it.
