Good morning!
Neighbor shared a homegrown eggplant with us...i'm gonna bread crumb it and cook in skillet (like fried) with parmesean).
Never fixed one before so should be interesting!
It is recommended to soak the slices in salt water, rinse and drain before other preparations. Some varieties of eggplant have a bitterness that the salt water removes.
 
Good to know! This is the big large black one! Lol no idea otherwise
The most commonly grown one (Black Beauty) is one that needs soaked in salt water. The kind I grow is also a black eggplant (Nadia) but does not have the bitterness so I can get away without soaking it.
