Another note; I just washed and cored the apples . Left skins on , and not peeled. Diced with skins. Enhanced color to cake.

Indeed no shortening. The dough is also lower hydration, so it makes a slightly stiffer dough to work with.
Another note.. recipe calls for Vanilla sugar. In the European baking, they use the Vanilla sugar version often,, instead of Liquid, as is common in the US. recipes. View attachment 3294814
I have both. I equate one packet of Vanilla sugar to about 1 teaspoon of liquid.
WOW...this apple CAKE is FANTASTIC. I am fond of Healthy Recipes and this is ONE of the BEST. I have the recipe and WILL be making it. AND I have Apples. When my son came from Rochester he stopped at the Orchard in Geneva and got the Honey
Crisps for me. They were expensive....and what is not expensive this year. Actually they were 20 apples for $20.00. THEY are all a beautiful color a great taste. Thanks again for the Healthy Recipe

Honey Crisp are my absolute favorite! But, yeah, pricey. The farm market where I shop has half bushels of apples for $15. But NOT the honey crisp. Sometimes at the very end of the season before they close at Christmas, they have some on sale, but more often they're all gone by then.

Sally that is a SUPER price any time of the year. ENJOY. We all
go "around" once....and Apples are on my HAVE LIST.
 
I'm drying my second half bushel of Empire apples right now. They aren't my favorite eating apple. But man, oh man! are they good dried! The drying concentrates to sweetness, but they still have that tang.

Honey Crisp are also good dried, but I love them fresh, so they usually don't make it into the dehydrator.

I hear you. Honey Crisp are my favorites ....any condition any time
of the year. They are the BEST.
 
Marie, I find 1 tsp salt per loaf is about right.
If I recall correctly, Marie is using self rising flour which already has the salt in it. You do not add the same amount of salt to self rising flour as you would to all purpose flour to get the same results.
 
Bakers good afternoon one and all!

68 mostly sunny 80% humidity feels like 67 rain 12%.

Went to town this morning to take hubby to dentist and went shopping at Tractor Supply and Lowes.

Needed metal roofing for part of my chicken run, feed, oyster shell calcium, and some small things.
