Home made gummies. The recipe made way more, but I'm just posting the cute ones I had molds for. The rest are just round from little round ice cube trays. They are not as hard as gummies from the store, but my son likes them. The recipe makes a lot, so be aware of that!
2 cups fruit
1/4 cup lemon juice
1/4 cup lime juice
1/2 cup juice (not from concentrate)
Sugar to taste (add 1tbs at a time while on stove top)
5 packs unflavored gelatin
Put juices in a medium bowl, add diced fruit. Bring to boil, stir then reduce to simmer until fruit is mushy.
Put in blender or food processor and blend til smooth. Let cool 7min. Add 5 packets unflavored gelatin, put in molds or in parchment paper lined cookie sheets. Refrigerate 1 hr. If places in cookie sheets, after 1hr take small cookie cutter of choice and cut out.
*next time I will try making them without lemon and lime juice. This made them to sour and I had to add sugar, but it was the first time making them, so wanted to fallow the recipe. For the fruit juice I mashed and strained a whole mango and some blueberries. I don't have a juicer, so just had to do my best by hand to get 1 cup of juice.

**The site did warn not to use kiwi or pineapple juice or fruit because it will cause them not to set.
I am not a huge gummy person, but wanted to try these. They are good. Definitely taste better after getting to room temperature. They have a gummy/jello mix of texture that I don't love, but others might.
Edited to add that the recipe says to store in container with lid in fridge.
