Any Home Bakers Here?

The turkey looks great, do you also eat the Canada geese? We do have mallards here everywhere, but you are not allowed to catch them anyways and there isn’t a lot of meat on them anyways 🤪 I remember during an exhibition the Chinese guests caught a lot of them and ate them, until somebody told them it is illegal here in Germany to catch them 🫣

Yes. I love goose.

When you prepare and cook goose right, it tastes very good. Almost like roast beef.
 
I roast a ( big) goose every Christmas 😉 since Canada geese look much smaller, I wasn’t sure if they are as tasty 😜

That’s really cool! I try to take one while hunting to serve at Thanksgiving or Christmas. Some years I’m successful, some years I’m not.

The biggest one I took was about 12 lbs. Usually they range from 7 to 10 lbs in my experience.
 
Wow, that is quite heavy! We have some here in Germany, but they look small compared to farm raised geese ( I know, there are lots of breeds) the German families have shrunk, so they no longer want large geese 🙄 I sometimes have trouble getting a large enough goose for Christmas, since the other families don’t want the larger ones anymore 😬

While I was at the rehabilitation clinic, it was close a several lakes, there were lots of geese on them, but as you can see, the Canada geese look kind of small… there were also some wild grey geese ( not on the photo )which were larger than the Canada geese, friends of mine tasted the wild version and said they didn’t taste good 🤔 but they caught them on their own lawn, and the lake there isn’t that clean, cos there is lots of boat traffic, so maybe that’s why they didn’t taste good?!

The thing about wild geese is that you have to drain the fat, otherwise they will taste bad, at least from my experience. I made that mistake when I first hunted geese.

What I do is before I cook the goose is I poke holes in the skin. Front and back. Breast and legs. This allows the fat under the skin to render out. While it’s cooking, you have a tray underneath, so the fat can drip into there.

The fat can be used in many different recipes. I’ve used goose fat for a few things.

That’s why I said when you cook it right, it tastes very good. Almost like roast beef.
