Here’s what I made today!

German Brown Bread

I've been making this bread for years and converted it to a bread machine recipe so long ago. Turns out this is exactly like the Cheesecake Factory bread. Who knew!

PREP TIME 1 hour 30 minutes
COOK TIME 45 minutes
RISING TIME 35 minutes
TOTAL TIME 3 hours
SERVINGS 1 loaf


INGREDIENTS

Wet Ingredients

  • 1 cup warm water
  • ⅓ cup molasses
  • 1 Tbsp honey
  • 1 Tbsp olive oil

Dry Ingredients

  • 2 1/4 cup bread flour plus 1/4-1/2more
  • 3/4 cup whole wheat flour
  • 1 Tbsp cocoa powder
  • 2 tsp granulated sugar
  • 1 tsp kosher salt

Add to Dry Ingredients

  • 2 tsp quick rise yeast Instant

Optional Topping

  • 2 Tbsp rolled oats for topping the dough if desired; optional
  • 1 egg white

INSTRUCTIONS

  • In a med bowl, combine all of your dry ingredients except for the yeast. Stir ingredients to distribute evenly.
  • Get one cup of hot tap water and pour it into the bread machine bread pan. You want it a little hot to the touch since it will cool off some once you pour it into the bread machine pan and add the other ingredients.
  • Add honey, molasses, and olive oil. Don't worry about stirring. It will incorporate while the machine stirs.
  • Grab your bowl of dry ingredients. Pour dry ingredients on top of your wet ingredients.
  • Make a small well on top of your dry flour mixture and add your yeast.
  • Select the dough setting and start your machine.
  • When the kneading and rising have finished, transfer dough to a wooden board or counter. Shape into a loaf.
  • Place dough in a greased loaf pan (ceramic or glass. Metal can cause undesirable browning). Cover with a clean flour sack towel or plastic cling film and set aside in a warm place for about 45 minutes.
  • Once your dough has risen, you can brush with egg white and top with oats if you so desire.
  • Bake on middle rack of a 350°F oven for 35 minutes or until internal temp is 190°. Turn pan about halfway through the cooking time for even cooking. Turn out of pan and let cool for 30 minutes on its side on a cooling rack.

I finish my grandpa’s Christmas present today. All I needed was a pole, two sections of rope, and this flag.

The knots I learned actually came in quite handy.

I used two Halyard Bends to secure it to the pole.

An Alpine Butterfly knot to secure the flags top grommet to the rope was used.

The bottom grommet actually tore out. I don’t know how long it’s been like that. As a result, I had to use a Double Sheet Bend to secure it to the rope.

Man, those knots came in handy.

Well, I need to get back to planning Thanksgiving dinner. I’ve been putting that off.
 
I actually need to make my thanksgiving dinner plan.
I'm lucky that DH likes the same thing, every year. I don't need to wonder "what to make."

Turkey, mashed potatoes and gravy, lemon meringue pie, stuffing, celery sticks stuffed with cream cheese. These are a given. Possibly a salad, and if I make cranberry, he *might* have a little bit "if he has room."
