I made some coffee punch for a Christmas party at church last night. It was a hit. Coffee milk (made with coffee syrup) is Rhode Island's special drink. This punch is essentially coffee milk with homemade syrup, and ice cream to keep it cold :)

Ingredients

  • 1 gallon whole milk
  • 1/2 gallon coffee ice cream
  • 1/2 gallon chocolate ice cream
  • 1/4 cup powdered instant coffee
  • 2 cups granulated sugar
  • 1 cup water
  • chocolate syrup (such as Hershey's), optional

Instructions

  1. In a small saucepan, mix the coffee powder, sugar, and water and heat until the sugar has melted and all the ingredients are dissolved and well mixed. Don’t boil.
  2. Refrigerate the mixture in an airtight container until you’re ready to use it, at least 30 minutes. The liquid will get kind of syrupy. (The syrup can be made up to one week prior to making the punch)
  3. When ready to serve, mix the milk and coffee syrup together. You don't have to add all the syrup, just taste it as you go.*
  4. Drizzle some chocolate syrup into your punch bowl to decorate it. Pour the coffee milk into the bowl.
  5. Add all the ice cream, by scoops, into the punch. Stir gently to mix. The ice cream doesn’t have to melt all the way prior to serving. (It serves as the ice, keeping the punch cold) You can drizzle some chocolate syrup on top of the ice cream as well.
  6. Enjoy!

*The rest of the syrup can be used to make coffee milk. Just add about two spoonfuls to a glass with some milk. It's a Rhode Island favorite!

Does anyone here have a gas stovetop with an electric oven? What do you think of it?
I don't know what the prices look like anymore, but we were able to swing an induction range about 6-7 years ago. The induction cooks like gas, and the oven is obviously electric for my cookies, etc. I'm going to be buried with this thing! 🥰

 What is induction cooking? I've heard of it, but don't know what it is/means.
I don't know how it works, but I know you can put your hand on an active burner and it won't burn you. But you can put a pan of water on it and it will start boiling very quickly. I think it works by .... magic! 😄
