Any Home Bakers Here?

Well a little late but I just baked our Christmas ham :). My sister Ended up in Hospital over xmas so her half ham ended up in my freezer and now she can't eat any processed meat so it's no good to her. So Finally got round to baking it! I did it from frozen but it's already smoked so doesn't really need any baking to eat so think it won't matter if it didn't get to correct temp in the middle. Cooked it for two hours on low to defrost then baked as normal.

Now I'm looking for some salads to put with it and was surprised to find not a single one in the index! Do you guys not do salad sides much?

We like salads but they tend to be just side salads (greens with toppings like tomato, onion, other veggies). I did make chef salads the other night for dinner that included ham and hard boiled egg. The other salads I make are egg salad or potato salad. No real recipe for those, I just toss things together.

I used some of our Christmas ham (it's sliced and in bags in the freezer) in homemade macaroni & cheese for dinner earlier this week, that was good. And I like to use it in potato soup too.
 
Interesting. We do lots of salads. Like rice salads or chicken and pasta salads. My cousin does a really nice couscous and prawn one that I must get the recipe for.

I love salad. Maybe it's our hot climate that makes us like them. Have you made your own mayo? Nothing like home-made mayo on potato salad. I had a really nice bought salad (as in bought at the supermarket). It was pumpkin and quinoa. I was going to look up to see if I could find a recipe for it or something similar. That quinoa is nice, and if you like couscous you'd probably like it too.

Yes! For the first time at Christmas. I totally forgot to buy some for a recipe so decided to make my own. Was really nice but **** it used a lot of olive oil so wasn't cheap!

I'm trying to perfect the Coles deli pasta salad (don't like woollies one as much) Have it except no mayo I buy has the same taste as the one in their salad. I should try making my own with it. Hmmmmmmm

I've got some quinoa. Bought it to put in homemade multigrain bread.

How are you all making mayo (besides the oil)? I've never tried making my own.
 
Egg yolk or 2, bit of white wine vinegar, smudge of mustard, season and wazz it up in a food processor while adding the oil very slowly.
 
i find mixing around 60% veg oil and the rest olive oil makes for more less "olivey" flavour (and its cheaper :)


Ahh. Will try that next time. I'm not that fond of olive oil flavour. Only ever buy the extra light as is as its less strong.
