Any Home Bakers Here?

Is anyone vegetarians? I need ideas for low meat content foods (red meat disagrees with her ulcerative colitis) that I can cook up and freeze in single serve portions for my sister who isn't well. Need high fibre and low dairy. I've been googling and seems lentils are the way to go? She pretty much just eats vegetables but I want to get some protien in there too because I'm sure I've read that just eating vegetables alone isn't healthy either?
I used to be. Lentils, or any other beans, or chickpeas are all good. Rose Elliot's recipes are nice. You can make a really nice meatless minestrone using whatever veges you like, kidney beans, and a tiny teeny little bit of dark miso for flavour. It's really nice. Tofu is another "staple". Beans can make you "windy" though, are they ok for ulcerative colitis? The other source of protein for vegetarians is mushrooms. Mushroom risotto is yummy, and should freeze well.
 
Mushroom risotto sounds great! Do you have a favorite recipe for that potato chip?

Hmm I didn't think about the wind thing. I was thinking at least it had fibre and protien. Do all beans do that? I just made pumpkin soup and added a can of white beans to it for some added fibre. Actually added a nice finish, think I might add them from now on. I might give beans a miss for the rest of the recipes then!

I never would have thought of mushrooms for protien. I found a recipe for individual chicken pies you freeze then cook when needed. I will tweak it to be chicken and mushroom. Thanks !

Hmm maybe a mushroom farm box might be a good present for her too!

Off to find a nice mushroom risotto recipe too!

I can't cite a source, but it seems I've read that pre-soaking the dried beans before cooking them cuts down on the "wind" factor.

appps, Portobello mushrooms have a nice firmness to them. Using the large caps in place of ground beef makes a very tasty burger. I prefer the baby 'bellos in things like soup over other mushrooms because they don't get too soft when cooked.

I'm a bit ashamed to say I have never actually tried anything but the regular button or white mushrooms. Have to buy some for this so I'll give them a try!

For things like that, I don't follow recipes, I just fling things in and hope for the best....

Not necessarily, it just occurred to me that it might be an issue. I know nothing about what should/shouldn't be eaten with that condition, it's just the beans are renowned for causing gas, and a sudden increase in fibre can also make you "windy".

Definitely give the portobellos a try, they are delicious.

Is she ok with eggs? How about avgolemono. yummm.

You can make patties and rissoles and things with any sort of beans, chickpeas or lentils, just mash em up in the food processor with whatever-you-like and make the patties. Oats mixed with egg can also make "pretend burgers".
 
appps, is she ok with turkey? I really like the ground turkey as a burger, especially when it's seasoned up and cooked on a grill.

eta: never mind...forgot about the vegetarian thing for a minute

It's more the red meat I think. I'm not sure we have turkey mince, we don't really do it like you guys over here. I know you can buy frozen breast rolls during the year or frozen whole ones at Xmas but have never seen mince.

@potato chip. I had to google that avagolamon. Had never heard of it. Sounds worth giving a taste test!
