Chocolate cream pie with pumpkin decoration (not too happy with how the pie decoration turned out, but oh well).

I'll ask my wife if I'm senile here but 24 hours has been tops for us. Ok I just asked her I'm not senile.
Of course I don't do that sponge and extra stuff either.
If you had an older starter, you would not have to wait that long. Two hours between rises is a long time with most recipes I use.

The overnight sponge helps develop the flavor though.

If you want some that is very old(see the brochure I posted), send me a message with your address and I will mail you some. You can add it to your current starter. I think you will be surprised by the difference. Can't hurt since It is fee for you.

I am more than willing to try your way. I've had a near lifelong love affair with yeast starting with brewing my own beer after coming of legal drinking age in Germany and Sam Adam's just isn't close to a quality beer, not to mention bock or double bocks or so many worthwhile other styles of beer.

I will admit I never once saw a 2 hour rise, but fridge babies were usually ready in the AM. And I will never adulterate bread with baking powder rheinheitsgebot applies to bread and beer in my book.

Thanks. The gingerpeople are something I wanted to make, since I've never made them before. I thought they would be nice to give to people if I can come up with a better recipe, that is not molasses based. All gingerbread cutout recipes are like a molasses cookie. To me a molasses based cookie should be round with sparkly sugar on top.

I have some other ideas to try.
