Is it a coincidence that there are a bunch of Georgians on this thread? LOL.

Once I bought some ceramic beads to place in pie shells for pre-baking ( of course it was a bought one) . Just poured them on…and what a mess, the pie shell baked up onto the beads and the whole thing went in the trash.. crust, beads and all .

Thank goodness, those frozen pie crusts come in 2 in pkg. Wish I had known about the tinfoil thing then. I have seen those metal beads on chains to use to pre-bake the shells, seems more cost effective - I like to eat the dried beans...

Thanks for your post. Made a OMG from scratch crust. It was probably a little dry, but first attempt..ha ha..Decided to just bake it "raw" as per recipe. It is done in the same time as the ones I have baked in the past in commercial crusts, but shockingly did not have to add a crust shield. Will critique soggy crust or not tomorrow, it is cooling now. But plan to eat it anyway...

So glad it was a success! I was blessed with dozens of little old lady relatives who schooled me in homemade pie crust from the moment I was big enough to stand on a chair in the kitchen and pie crust is one trick they put up my sleeve (helped land me a husband, lol) -- once you have from scratch crust you just can't go back.
Of course, the funny thing is I don't even like pie - don't eat the stuff. I do, however, LOVE some good "pie crust cookies" (scraps of crust cut in pieces, sprinkled with cinnamon and sugar and baked) -- have been known to decide to 'treat the family to pie' just so I can have my cookies, lol

Applesauce chocolate chip cookies?

Yep! The applesauce makes them so moist and yummy. The texture and flavor is almost more like a spice cake than most cookies.

2 cups applesauce
1 tsp baking soda
1 cup butter
2 cups sugar
1 1/2 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves
1 tsp vanilla
2 eggs
3 1/2 (approx) cups flour
2 cups chocolate chips

Mix applesauce and baking soda in container large enough to allow for some expansion (the reaction when you mix can lead to some "fluffing", lol) - set aside. Cream butter and sugar - then add cinnamon, nutmeg and cloves. Blend well and mix in vanilla and eggs. Mix in applesauce mixture - don't panic, at this point your dough/batter will take on a really weird appearance....just go with it. Add flour, 1 cup at a time. I start with 3 cups, bake a test cookie and add flour as needed. The "dough" will be soft and somewhat loose.
Bake at 350 for 9-11 minutes. ENJOY!!!! Cool completely then store in an airtight container (if they last that long)- they will stay soft and moist for days. If not baked and cooled completely they can be kind of sticky and will stick together in storage, but they eat just fine, lol.

I will have to try this! They sound yummy!

I just made healthy banana bread. I substituted butter for pear sauce, turned out well. I have been baking banana bread and giving some to the neighbors everytime I bake it I will make extra to give. I'm trying to create good neighbors =)

Interesting recipe. I don't do cookies often, but chocolate with nutmeg, clove, cinnamon sounds great.

I never really liked banana bread, but never tried to make my own. Bet yours is better than what I have tried in the past.

Gee, wish I lived next to you, now that's a sure way to have good neighbors.
