@BBQJOE or anybody: do you have a favorite ground beef chili recipe. Or just share what seasonings you like and ratio to a 1# package of lean beef.

We made chili last night and used two of those packaged chili seasoning mixes and it just doesn't have enough flavor. BLAND !!, so have added some chili powder to see if that will help on the reheat.

In the past, have tried adding both chili powder and cumin in addition to the packaged seasonings…but too much cumin and it tastes like tacos. But I don't think just chili powder is the answer?

I want plain old fashioned, simple but tasty chili

I don't know what seasoning or spice I am missing.

Start like you would all good things--brown an onion along with a diced jalapino and add a tbl. of tomato paste and thn a couple of pressed or diced cloves of garlic; cook for a minute. Toss in your pound of soaked beans and then add 6 cups of water and some salt. Bring to a boil and let simmer until tender--something like two hours.

When beans are about done, brown the ground beef. Add some salt--like half a teaspoon. A similar amount of black pepper and a teaspoon of cumin.

Add to the cooked beans and then taste for spice. If it is not hot enough, add some Grandmas chili powder--not a chili mix packet. For the really adventurous, add 1\4 to 1\2 tsp of cayenne powder.

Variations:

Use a habanaro pepper instead of the jalapino
Add half a bell pepper to the onions

Top with grated cheddar cheese and bake some corn bread!

sounds yummy, i will try it this holiday season. thanks for sharing..

I agree brown an onion and then cook your meat. My family always adds some vinegar and brown sugar to our chilli. Vinegar really brings out the taste. Just about 2 or 3 TBSP per pound of beef.
And here we like to eat our chilli with cinnamon rolls.

I am going to go back to the original post and add some tomato paste.
