Any Home Bakers Here?

@Jesusfreak101 you might want to check out agave as a sweetener for your dad. It has a honey type consistency, is really sweet and it's not supposed to make your blood sugar rise. We used to have it in our store for people that wanted sweet drinks as an alternative to sugar. You should be able to find it in the baking aisle of your grocery store along with other sweeteners.
 
I am making cupcakes tonight (from a box) and rolls from scratch. My husband's friend passed away and his service is tomorrow. It's a pot luck. My aunts 50th birthday party is also tomorrow and a potluck. I called and asked if she is getting the cake and she hadn't thought about that yet, so I told her I'd take care of the cake. I just ordered it. It's been a long time sense I decorated cakes and sometimes it's worth paying for it! Haha. Plus way more people are coming then I had thought, I kind of regretted offering to get the cake

Interesting conversation. My sister has just been diagnosed and while not on insulin yet is struggling to keep her numbers low enough to keep her off it due to other conflicting health issues. So this is going to be our first Christmas where i have to think about all the sugar and other ingredients I use. I really wanted her to be able to have just as nice a Christmas food wise because she generally just sits and watches us eat :-(

Any tried and true diabetic recipes? Especially deserts I guess.

Oh and can you use that new stevia stuff and it not effect a diabetic like sugar would? She doesn't do artificial sweeteners.

It seems that the biggest trick is to go with carb balancing--That is the ratio of sugar to fiber in the food. Adding fiber helps a lot too along with losing weight and exercising.

Stevia would be a good choice for some foods--but it adds an odd taste to some foods. It is best in acidic things.

Yes stevia is diabetic friendly. From my understand cane sugar is really hard on them, stevia because its more natural (less processed) is a better for them. They make (at heb store in texas) glycemic health bread that is perfect for diabetics. We use it and it taste exactly like regular bread(i use toast and cornbread for stuffing) . They are also noodles that can be they have now for them as well. Mostly for diabetics the best thing is protien. Natural sugars are easy for the body to break down its the processed sugar that can cause problems. But to much fruit can as well.
 
I just looked up "diabetic desserts" and diabetic pecan pie on Pinterest. They have lots of recipes! You guys should be able to find some good ones there and see substitutes to make sure they are included in the holiday meals. I personally don't have any diabetic recipes, but thought I would look.

My wife is borderline diabetic. You can Use Stevia in place of sugar in the right amounts (I don't know the conversion) but no one will notice. I doubt it has glazing properties.
 
He cant eat regular bread or torillas with out getting sick same with ice cream. His dr wants him to go ahead and eat like a diabetic. It could just be him not sure thats why i want to try to make it diabetic friendly. I am just being over causious probably but after seeing him start shaking and sweating i want to avoid that again.

That's why I basically said best to just ask him what he can tolerate...
