Any Home Bakers Here?

I always did a third rise on my bread in Wyoming, but that was because of the elevation. The first rise took a little less than a 1/2 hour, the second was another 1/2 hour and the third was another 1/2 hour. It only took 1/2 hour for the dough to double - my first attempt at bread out there I didn't check it until 45 minutes and it had over proofed and fell without me knowing it. The texture was bad so I did some research and found the 3 rise system.

Is Wyoming high or low? We are basically at sea level.
 
I was at 7400 feet, 1200 feet above Cheyenne and 15 miles west.

We used to sit on lawn chairs in our front yard and watch the fireworks on the 4th of July. There were 2 subdivisions out of town that had pretty good firework displays, then the one in town and there was usually a thunderstorm in the distance so we watched God's display also. So 4 shows for the free - and a beverage of choice also. Of course the firework displays were tiny - usually about 2 inches tall...
 
I'm making croutons tonight & am pretty excited about it. I wasn't using a recipe, but the 1st batch came out ok. I used frozen bread that I'd cubed for stuffing, but never got the chance to make. I poured olive oil over it & sprinkled with garlic, onion & basil seasoning & baked it on a cookie sheet at 350* for about 20mins. I'm not sure exactly how long because the kids were using the timer for their school work & I kept taking them out to flip them, but when they turned light brown & started moving around the pan without sticking I pulled them out & let them cool right on the sheet. The kids like them, but they seem a little plain to me. As I type this, I realize I forgot the salt & pepper (duh!) Will add some extra seasonings to this next batch plus the salt & pepper & cross my fingers. I cant help but think parmesan cheese would be good on these too, but I don't know if that would burn or not
 
No app i havent seen that one problem my husband wont eat salad really its very rare i think it has to do with the fact he doesnt like any kindnof dressing. He eats spanich plan and he wont touch regular condiments either.

I've had a hard last couple of weeks, trying to get out of this little funk. I haven't been baking much, but today I decided I should make something with the daycare because they love when we bake and so do I

. I'm making sourdough biscuits, the first recipe on the pdf file @ronott1 posted on post #1026. I have them rising now and will let you all know how they turn out!

Instead of making them as biscuits, I did sourdough rolls. I was a little worried they might not turn out well, but they are super yummy!
 
You rolls are making me hungry lol man today days been productive i got all the inside chores done. Next is errands and outside chores.
