Thanks will do. Thinking about measure the leaves for amount and cut them up with those scissors.

I do grow basil in the summer but the chickens get those, so this is a first for me to use fresh basil in our food.

That's funny. I grow a lot of basil too but my chickens won't touch the stuff. Guess they aren't from an Italian line

I haven't been baking, but made some sourdough waffles this am.  After pigging out, cooked the entire batter into waffles to place in the freezer.

Thanks sunflour! They were good...now we are all stuffed! I haven't made waffles in forever. I have one of those flipping waffle makers like the motels do but it's like new. How do you make sourdough waffles?
 
I have never done so, but this past fall started seeing tiny moths in my house - they came from wheat flour in an airtight container - and there were cocoons on almost everything in there.  Had to toss it all and start with all new.   Still don't plan to place all that stuff in the freezer, just keep a closer eye on it.

Bet our grandma's would have just sifted those and used them anyway.:sick

Are they weevils?

Looks like I never posted the recipe, just a link? Here's the recipe from KA's site. Love to use the discard from a starter and not just trash it out.

I have an old fashioned square waffle/grilling appliance - but love those flipping ones - wonder if the waffles cook faster on those? Mine take about 5 minutes each to cook.

High-Fiber Sourdough Waffles

When you have sourdough starter to feed and take care of, and don't have time to make bread, waffles are the answer. This batter also makes great pancakes.
Sponge
1 cup (4 1/4 ounces) King Arthur Unbleached All-Purpose Flour
1 cup (4 ounces) King Arthur 100% White Whole Wheat Flour (or use entirely all-purpose flour)
1/2 cup (2 1/4 ounces) Hi-maize Fiber; or substitute 1/2 cup all-purpose flour
2 tablespoons (7/8 ounce) sugar
2 cups (16 ounces) lukewarm buttermilk
1 cup (8 ounces) sourdough starter*

Batter
All of the prepared sponge (above)
2 large eggs
1/4 cup (2 ounces) melted butter or vegetable oil (1 3/4 ounces)
3/4 teaspoon salt
1 teaspoon baking soda
*Not yet fed; just as it comes from the fridge.

To make the sponge: In a large mixing bowl, combine the flour(s), Hi-maize, sugar, buttermilk, and starter, stirring just to combine. Cover loosely and let rest at room temperature overnight. (Feed the "mother" starter as you usually do, using 1 cup flour and 1/2 cup water.)

To make the batter: Beat together the eggs, butter or oil, salt, and baking soda. Blend this into the sponge. Pour 1/3 to 1/2 cup batter into your greased, heated waffle iron, Belgian or standard. Cook waffles as directed for your iron, till brown and crisp. Serve with butter and maple syrup. Yield: about eight 6" waffles.

Probably started out as weevils, but metamorphosed into small moths. (tried edit twice to get a word how I wanted it, but dumb computer cannot take a joke:)


Decided to bake a mix I have had for ages, but still in date March. After posting about the moths, one of those fellows was inside the box and left our world starving on the outside of the package. It's a blueberry muffin/cake mix - I am using real blueberries from the freezer.....not finished baking , but smells wonderful.
