Hello! I was excited when I saw this
I am currently in the process of making oatmeal bread as I type. I will share my recipe for those who are interested:
Oatmeal yeast bread.
1 package of yeast
1 tbsp + 3tbsp of honey
1 cup of warm water + 2cups of water
1/4 cup of melted butter or coconut oil
2 tsp of salt
4 cups of flour + 3 cups of flour + flour for kneading
Proof the yeast. Combine one cup of warm with one tbsp of honey. Pour over yeast, stir one. Let sit for 5 to 10 minutes.
Make the sponge. Combine melted butter or coconut oil, salt, 2 cups of water, 3 tbsp of honey, and yeast water. Mix. Add 4 cups of flour, add your heaviest flour first. I personally use 2 cups of oatmeal flour and 2 cups of all purpose flour. Stir until its all mixed in real good. Add remaining 3 cups of flour on top. Cover and let sit in a warm place for one hour.
Knead dough. Stir in remaining flour. Turn out on a flored surface. Knead for 10 to 15 minutes. Set in a greased bowl and cover for 40 minutes.
Make loves. Remove from bowl on to floured surface. Cut into two equal halves. Roll flat with rolling pin. Roll up the dough like your making cinnamon rolls. Press the air out of the ends and fold under. Set in greased bread pans and let sit in warm area forr 40 minutes.
Bake at 350 for 30 to 40 minutes.
