Any Home Bakers Here?

Well I have just sort of half invented a lactose free cheesecake. It half came from a cheesecake slice recipe that used lemon jelly as the setting agent and I tweaked it to make the rest of it lactose free.
Tastes so yummy at the moment but now we wait to see if tomorrow we get to have lemon cheesecake for desert or lemon soup lol

hink it's going to work. Just gave it a little shake and it seems to be setting well. Yay.

Now just need to work out what can replace lactose free cream cheese to make it totally dairy free. My. DD can mostly do lactose free but it still upsets me.

Those blueberry muffins look awesome. Would you share your recipe - I have searched the index and may have overlooked it but cannot find it.

Also, would like to know how you made the netting protection for your blueberry patch. Mine were planted last year and needing to add protection soon - trying to figure out a plan to do this.
 
I am making another cheesecake today. I did Easter when my son was home three weekends ago... But I can not not have Easter Dinner.
Ribs instead of ham, and just a salad for a side, but not popcorn and netflix.

I am getting started earlier, though!

Is that sort of like silken tofu? Needs to be able to be beaten.
I don't know what the spread is like, never seen it... but if it's a spread, they've probably mixed it up with something?? Have you had tofu? There are 2 types, one is "clumpy"/kinda tough and chewy and one is really smooth (the silken type). The silken is softer than cream cheese (it's not fatty, it's more like blancmange sort of consistency but not wobbly and thin). If you search, there are a lot of vegan desserts using it. I don't know what consistency you end up with, or how it compares to "proper" cheesecake, but that's what I'd be looking at using if I had to avoid dairy.

I had a friend that made a dairy free cheesecake from macadamia nuts! I was surprised how well it turned out in taste and texture. Here's a link to a recipe.

Ribs and a salad sound great.

I'm making a banana pudding - but in the middle of thunderstorms and tips on meringue recommend making it only on a dry day

I don't care if the meringue is soggy, Just hope we don't lose power as it goes in the oven.
