Any Home Bakers Here?

Is anyone vegetarians? I need ideas for low meat content foods (red meat disagrees with her ulcerative colitis) that I can cook up and freeze in single serve portions for my sister who isn't well. Need high fibre and low dairy. I've been googling and seems lentils are the way to go? She pretty much just eats vegetables but I want to get some protien in there too because I'm sure I've read that just eating vegetables alone isn't healthy either?
Lentils are good. Partner, who's vegetarian, does a lot of Chinese stir fries with tofu and rice. There's a lot of Indian dishes as well that can be great vegetarian (curries, dal, soup, parathas etc.). Thai curry with tofu instead of meat. Enchiladas with beans and without cheese, maybe with a cashew sauce.

Some cookbooks that we use frequently are Moosewood and Lord Krishna's Cuisine. You can also find a lot of their recipes transcribed online.

Eating just vegetables is missing out on a lot of nutritional needs.
 
Joshua out of sugery (since 1:20) we be able to go home by five hopefully he finally ate some and had a dirty diaper and a wet one.

I'm not sure we have turkey mince, we don't really do it like you guys over here.
Where do you live? I've had some, they definitely have it over here, just at coles or woollies, nowhere special. I bought it, forgot I had it and the dog got it.... It's one of those things you might not notice unless it's on special or you go looking for it for a recipe.

I'll have to look more closely it seems. Mind you I tend to buy my poultry from the deli section so maybe it's over in the prepackaged stuff.

Been having well problems. Was without water for a few days. I had to go to the neighbors and get water. Hubby figured out a way to keep the birds waterers with water. The clean trash can was full of water and higher than the coops so the water was gravity fed to the coops waterers. It worked great and save me from having to carrying water to them. We had water yesterday so I took a nice long shower. We replaced our pump, control box, pressure regulator and pressure regulator valve (to keep the pressure steady with out the well going on and off when you run water). Today no water again. We do have the tank filled so we will have water until the tank runs dry and at least flush the toilets and basics. Hopefully we will figure out why. I did make some whole wheat sourdough bread and some onion bagels.

 
Cut the bread and it tastes great, soft, but it is a bit crumbly. Because we have been having well problems. I mixed up my dough this morning. I let it raise but had to go out to help on the well so I punched it down and do a second raise and went out to help some more. I came it later and it had doubled in size again. I punched it down and formed my loaves. It didn't raise as well the 3rd time but was OK. I finally baked it this evening. It looks and tastes great but is a bit crumbly. Any ideas, opinions or suggestions???

I made onion bagels too, not sourdough. I mixed up the bagel dough too this morning. I neglected it and didn't punch it down like I did the bread dough during the day. It's 11:30 and they are in the oven and actually they're turning out good. They took a bit longer to raise. About 10 minutes more before I take them out of the oven.
