Any Home Bakers Here?

Checked the apple trees yesterday while I was trying to weed the garden. The apples are ripe, so time to pick and store in the root cellar. I need to clean the root cellar out first and find some wooden crates to put them in. Paper bags for very short term storage.

I will eventually can them up as pie filling and applesauce. Lots and Lots of applesauce.
 
I agree, these are the earliest apples I have ever seen. I have no clue as to what type of apple they are, the trees are ancient. The neighbor (67 years old) said he can't remember when they were planted.
It's july for goodness sake. I should be picking blackberries and produce not dealing with apples. But this is the first year I am picking them before they are overripe.
