Whenever I make cornbread I add a 1/4 cup of honey to the recipe and just fold it in. It is so nice to bite into a piece of cornbread and taste the honey already there. What worked best was when I used semi granulated honey.Made corn bread on Sunday and I ground corn to make the cornmeal. I am the only one eating it. Trust me, the cornbread is awesome!

The other thing I do is to bake the cornbread in cupcake liners in a cupcake pan. One cupcake equals one nice sized portion and the rest of the cornbread does not start to dry out since there are no cut edges.
If done correctly, the honey does not act like a sweetener but is more like if you take a piece of cornbread and pour some honey on it only it is already inside the cornbread. I add the honey in addition to whatever sugar or substitute sweetener that I use in the cornbread recipe.Great tips!
I will work on different sweeteners. I do like the cupcake pan idea too

I add the honey in addition to whatever sugar or substitute sweetener that I use in the cornbread recipe.
A couple of nice things about substituting honey for sugar in a recipe is that the the baked goods come out moister and retain their moisture better and the honey has a natural mold inhibitor in it helping to preserve the baked goods.
