The recipes I find are for making a coconut custard. I did find one that made a custard and then baked a meringue. It looked good!

Nah, it's fine, I fed it again and it should be good to go after a feeding or 2, if that fails I have some in the freezer, I have backup plans on top of backup plans.That is too much trouble!

Mine is currently in it's "vacation house" which is a glass jar with a heavy but non latching lid (will allow venting but keeps dirt and cat hair out), when it's in the fridge, it's in a plastic Tupperware as it is slowed down and doesn't need as much room when cold.
For myself, I like the custard recipe from the last coconut pie I made. DH is the one that thinks the pie would be better if the filling were baked. And he prefers whipped cream over meringue (I like meringue).Maybe he should just make his own and I'll make my own, lol.
