Any Home Bakers Here?

I need ideas for popover stuffings that can be put into the popover before they cool, and before the steam escapes, so no meat.

My ingredient ideas are:
cream cheese
shredded cheese
scrambled egg
herbs
diced fried onion
diced peppers
diced and fried mushrooms
pizza paste and mozzerella cheese
cauliflower
brussels sprouts
broccoli

NO beans or lentils!

hmmm...actually pretty good list, but what are any other ideas?

Cream cheese, scrambled eggs and herbs--add a pinch of nutmeg and a bit of onion powder. Salt of course.

A second one: diced fried onion, diced peppers and mushrooms. A bit of basil, black pepper and salt

A third one: creamcheese and cinnamon sugar!
 
I made cultured butter last night. I used cream from walmart and cyrstal buttermilk as the starter. The cream cultured with 3 tablespoons of buttermilk in the proofer set at 76 degrees F for 12 hours. I then whipped the cream in the kitchenaid mixer.

The milk that was left after the butter formed is real buttermilk! I will cook something with it to see how it works. The butter was rinsed 4 times and I added 1\8 tsp of salt to it.

I had some of the cultured butter on toast this morning. I liked it
