@rjohns39, I had a question for you. A while ago, you told me that Colby was ready when dry. It doesn’t need to be aged. A thought just occurred to me today, do you think is the same for Derby?

Also, I took out my wheel of farmhouse cheddar one week early, because my cousin requested that it be less sharp. It’s good!

My friend from Japan is still getting settled, so I will get recipes as soon as I get a chance.

Does anyone here have a pasta dough roller they would recommend?
Santa left this one behind after woofing down the cookies and milk I left him..
Have not used it yet to rate it for you.

Does anyone here have a pasta dough roller they would recommend? I've looked at Amazon and the prices range from $25 to over $100. I don't want to go too pricey but don't want to go too cheap either and have it fall apart.

I'm looking for something similar to this (not necessarily this model):

My Oldest DD has one. It left the house when she moved out though. It also has the hand crank but there us usually an adapter for adding a motor to it.

Use Amazon and check the ratings and comments. Cost is not always an indicator of quality since since things are more expensive from foreign countries due to tariffs and shipping costs
