Guess I'll be one of those folks who gives a good review but added a lot to the recipe :oops:....IMO needed a Punch of flavor - added garlic, oregano, basil , tobacco and Worcestershire sauce.

Does anyone here have a pasta dough roller they would recommend? I've looked at Amazon and the prices range from $25 to over $100. I don't want to go too pricey but don't want to go too cheap either and have it fall apart.

I'm looking for something similar to this (not necessarily this model):

I have the Kitchen Aid 3 piece roller/cutter set and the extruder. IMO if you are going to make pasta just for yourself, then a good hand crank one would be fine. But, if you plan to make tons of pasta for the restaurant, then do get one that is electric or powered by your mixer - I got mine at a decent price and they are made in Italy :D

@rjohns39, I had a question for you. A while ago, you told me that Colby was ready when dry. It doesn’t need to be aged. A thought just occurred to me today, do you think is the same for Derby?

Also, I took out my wheel of farmhouse cheddar one week early, because my cousin requested that it be less sharp. It’s good!

My friend from Japan is still getting settled, so I will get recipes as soon as I get a chance.

I would certainly give it a shot. Worst case scenario, wax over where you took your slice an let it age a bit. My second batch of colby was a bit sharp after a month, so we decided to try it once dry on the third round. It was great. I need to get a gram scale for dividing cultures as eyeballing a half pack is just inconsistent.

@sunflour, i’m glad you like the recipe. I appreciate your honesty about adding a lot of stuff to it. Everybody has different taste, so it’s OK.

@rjohns39, Took out the Derby yesterday. It is, without a doubt, the best cheese I had ever tasted. About a quarter of the wheel was eaten yesterday, mostly by me. The wheel was 2 pounds. I guess aging for three days made it the best for my taste!

Anyway, We made a Japanese curry yesterday. Here is a picture. We had a side dish of spinach, which was to die for.

Thanks for the feedback on the pasta dough rollers everyone!

After some more research, I'll probably go with the KitchenAid attachment when I'm ready to get something (seems like more bang for the buck).

I made dinner rolls in the Dutch oven to go with our ham & potato soup for dinner last night. Guess DH liked the rolls just fine, he ate 5 of the 12 so need to make more bread today :D

Great advice! Now I want to cut a slice off of the cheddar wheel I have in my cheese cave!

The kitchenaid recipes usually work well.
 
I do not have a kitchen aid cost won out bought a Sunbeam like my other one
The pasta recipe will work for any roller pasta maker.

I use a kitenenaid ice cream recipe with my ice cream freezer that is not a kitchen aid.

I have their cookbook at home too.

'I will have James look we have a shelf packed with cookbooks but I think maybe not the kitchen aid one
