I have a spiral ham in my freezer. Unfortunately, there will be no one here to share it with. So, I will probably have peanut butter and jelly.

Story time.
If you read any of my junk on the Yum Thread, from time to time I post some of the bulk stuff we purchase at a local Restaurant Food Distribution company.
They have a scratch and dent store in the front of the complex.
It is hit and miss because they clear stuff out fast. You have to be there or be square.. hehe, at the right time.
Yesterday was a hit. It was Dollar Day on all pantry size bags. When bags get damaged, they can't sell them to restaurants. So the lucky few who show up on the right unannounced day gets lucky.
4-50# bags of morton softener salt $1 each
3-50# bags of navy beans $1 each
8-50# bags of corn grits $1 each...
Way too much to type and rant about but the premise of this post on the BAKING Thread is about these 2 bags:

We scored 100# of Professional grade Buttermilk Biscuit Mix. ($1 each).
So I guess we are having biscuits to go along with our holiday ham this weekend.
We had so much weight in our SUV that the tires were rubbing the wheel wells.
I'm going to food saver suction pack a lot of the one bag and freeze it a couple of days. No weables on my watch.. Giving the second to whoever needs it. Maybe a food bank.
Stay tuned for my new recipe I'll be posting soon. It's printed on the bag but I will probably tweak it a smidgen.

Tonight’s dinner will be Easter candy. I couldn’t decide if I’d bought too much or not enough. So many things I didn’t get! But getting everything together, and filling eggs with candy made me realize that I’d gone overboard.

Some I intentionally bought for me, but not all this!!!

What can I do with 200# of premium farm raised pork?
I raised a quality fed pig for my folks and today their Dr's changed their diets and said they are forbidden to eat pork. I won't go into details of the diagnosis but They just called and said come and get all these cases out of their freezer so they are not tempted to consume any of it.
We already have 5 freezers plugged in. I have 2 more but the power bill is going to hurt real bad if I plug them in. I am between a rock and a pork place!
I can't sell non inspected by USDA meat w/o consequences. So I guess I'll start giving away free premo pork to my long time egg buyers.
Buy 5 dozen eggs, get 5 pork chops free?
Ron, how big is your freezer?
