Any Home Bakers Here?

Hello,

@ronott1, thanks for that info! I did not know that!

@penny1960, glad you liked the cookies!

It is very confusing! I am not saying glucose is good for you but it is not fructose or hfcs. Light corn syrup changes the structure:

Corn syrup is a common ingredient in many hard candy recipes because it is an invert sugar. Invert sugar inhibits the formation of sugar crystals and provides a smooth texture to hard candy, caramel, and other cooked sweets. ... For candy making, light corn syrup should be used.

I learned this by watching Alton Brown

Sorry but no corn syrup here at all
That is fine, but it is the same as sugar. It is not better or worse.

With the diabetic BF you likely do not have much sugar anyway and good for you!

I use it for candy making only

Agave syrup on the other hand is high fructose and many think it is a health food

The monster cookies that we made when I was young were a very similar recipe to the one you posted. Only, we made them much larger than we made ordinary chocolate chip cookies ( about 4" in diameter), and we used a shot glass turned upside down to take a "bite" out of the cookie before baking.
They were my baby sister's favorite cookie.
